The Traditional Distillates are divided into two
production lines.
Blanc e Neri di Domenis
The Domenis Distillery in the 60s started a series of studies and
experiments not only to improve quality, but also to characterize
it using separate distilling procedures for the raw materials
coming from different variety of vine and, also by modifying
the plant, making this type of selection actually possible.
The Aged Grappa
Following the old tradition, the ageing of grappa is carried out
in antique wooden casks, not to reach an abundant extraction of
wooden aromas, but for the achievement of a chain reaction, which
is mediated by the wood and is able to grant round and smooth grappas,
as it should be for the most delicate and demanding palates. Their
name “Sogno di Dama” (Dame’s Dream), hides the
promise of a pleasurable and deep emotion.
